We are planning to fly to Thailand. Itinerary: Novosibirsk - Beijing - Hong Kong - Bangkok. In Beijing and Hong Kong for 2 hours to sit. Do we need a Chinese visa in this case or can we do without a 24-hour visa-free corridor?

No, with this version of the flight, a Chinese visa is not required, since you fly through Beijing and Hong Kong. On the way back, as you have already noticed, you can also stay in China for up to 24 hours without a visa, provided you have an air ticket to a third country.
