On an open Italian visa, you can easily go to Latvia.

Schengen visa of any category (type A - transit, type C - short-term, type D - long-term national) can be entered into any country of the Schengen agreement, which today includes 26 countries: Austria, Belgium, Hungary, Germany, Greece, Denmark, Italy, Spain, Iceland, Latvia, Lithuania, Luxembourg, Malta, Netherlands, Norway, Poland, Portugal, Slovakia, Slovenia, France, Finland, Czech Republic, Sweden, Switzerland, Estonia, Liechtenstein.

Also for the Schengen visa (categories A, C or D), it is possible to visit states that are only just about to sign the Schengen agreement: Cyprus, Romania, Bulgaria, Albania, Macedonia, Croatia.
