You will have enough to take your grandson to Bulgaria: a Bulgarian visa and a power of attorney from the boy's parents for the removal of a child to Bulgaria on you.

Your required documents: a visa to Bulgaria.

And also, do not forget to issue an insurance medical policy for traveling abroad. And for exporting a child from Uzbekistan, you need a power of attorney to travel with your grandfather.
